Cheesecake for a Crowd

My aunt and uncle from California are in town for a funeral.  We had them over for dinner last night, and my mom suggested I make "Cheesecake for a Crowd" from one of the Lion House cookbooks.  We definitely weren't disappointed!


Ingredients
1 package white cake mix
1 pint whipping cream
2 - 8 ounce packages cream cheese (I used 1/3 less fat)
4 cups powdered sugar
1 can pie filling 

Directions
Preheat oven to 350 degrees F and grease a sheet cake pan.  Bake white cake according to directions on package and pour into greased pan.  Bake for 25-30 minutes, or until done.  Let cool.

Whip whipping cream until stiff peaks form.  Cream together cream cheese and powdered sugar until fluffy.  Combine whipping cream and cream cheese/powdered sugar mixture.  Spread over cake.  Refrigerate at least 30 minutes before serving.  

Scoop pie filling over cake when serving and enjoy!
